Aure Wines is a family winery run on the Highland Vineyard property atop the Niagara Escarpment by the the Hoare family. In business since 2007, the vineyard originally produced Concord grapes for making juice, but made the transition to producing quality VQA wines, and now Vitis vinifera (wine) varieties have replaced the juice grapes. Varieties include Gamay, Cabernet Franc and Riesling, as well as the existing Old Vine Marechal Foch heritage vines.

The Hoare family is originally from England. They moved to Moncton, New Brunswick in the mid 90s for business reasons. Their backgrounds are in telecommunications engineering and psychology. Their reasons for coming to Canada were business, but they state, "Our reasons for staying are evident".

Aure Wines is committed to minimizing the environmental impact of its operations. They have designed their buildings to minimize energy use, employing a passive solar design which, in winter, uses the sun's energy to keep the building warm, In summer the amount of sun incident on the building is reduced by the use of sunbreaks ('brise soleil') and the building is cooled by natural ventilation. These techniques complement the upgraded insulation and 'living roof' which are employed in the building, thereby minimizing the need to use conventional heating and cooling.

Rainwater is harvested from roofs, filtered, and stored underground where it is used to supply toilets, laundry and exterior hose barbs. All water from faucets on the property is drinkable, treated well water.
